I don't understand what you are saying (this is a blog that's one-way), but I will assume you mean things like burritos, tacos and quesadillas. Have you ever thought about Mexican coleslaw as an option? You should definitely consider it.

It's similar to American coleslaw (the large-strips-of-cabbage kind, not the minced-green-KFC kind) but with a kick that makes it the go-to side for those tacos, quesadillas, and burritos you mentioned earlier.

Make this for your next Taco Tuesday, picnic or barbecue.

Is this healthy?

The traditional coleslaw is often drenched in mayonnaise. This is not always bad, but it's high in fat. This recipe, I believe, is much healthier. Olive oil adds healthy fats while honey and lime juice provide natural flavor as well as a host of nutrients such vitamin C and minerals. The red onion is rich in antioxidants and vitamins A and C. Cabbage contains vitamin K and folate. Cilantro has vitamins A, C and K as well.

Ingredients

The recipe requires a quarter teaspoon of salt. You'll need to add some salt to red wine vinegar as well.

  • 1/4 cup olive oil
  • 2 tbsp honey
  • 1 tbsp of lime juice (equivalent to one lime).
  • 1/4 teaspoon salt
  • Half a teaspoon of ground cumin
  • 14 cup thinly sliced red onion
  • Red wine vinegar, 1/2 cup
  • 2 cups of purple cabbage, finely chopped
  • 2 cups of finely shaved green cabbage
  • 1/2 cup fresh cilantro leaves

Red onion should be soaked in red wine vinegar at least 20 min. Mix the honey, olive oils, lime juices, cumin, salt and cumin in your serving bowl.

Sometimes, cabbage can be bitter. I'd suggest adding more honey to your dressing and reducing the lime juice. Pick out any large white pieces of cabbage near the stem. These pieces are more bitter.

What can I substitute for cilantro?

Mint or parsley can be substituted.

Can I reduce the amount of oil in my cooking?

You can replace the oil with avocado and water, and then blend together the dressing.

How to store Mexican Coleslaw

Keep the slaw in the refrigerator for up to 4 days. It will lose its texture after that (it will still be a texture but it won't look very appetizing).

I do not recommend freezing the slaw. The cabbage has a lot of water and freezing/thawing will do no good.
